Bar August – Andrew Hotis and Michelle Chadwick Hotis
1. What is you background in your chosen business and when did you know that you wanted to open up shop for yourself?
Both Michelle and I have many years of experience working in restaurants and an earlier background in the arts. Our project lived only in the realm of or dreams and ambitions for many years before we were able to find our opportunity to really begin. Opening a place of our own was a great way to create a vehicle for expression and creativity and to give us a way to support our family.
2. Why was New Haven your choice? How has the clientele and city treated you thus far?
We feel like New Haven chose us! We came to New Haven to be close to my son and the bars namesake back in 2010. Our sense of family is very important to us and informs our style of service and hospitality. Our guests are local and international and have been so utterly supportive and appreciative of what we do. They show us respect and gratitude at every turn. We do our best to return that gratitude every day.
3. Why do you think it’s important to remain open during this tough time and support the community?
We try to do small things each day to give people in this time a touch of comfort and luxury. We strive to be a safe and considerate team and make a space that can accommodate our neighbors in this complicated time.
4. What is a recommendation from your menu you’d give to people who aren’t familiar with your establishment and want to try it out? What menu item would you pair it with? (Coffee, cocktail, wine, beer etc)
We specialize in fine wines from around the world. Wine is our passion and I curate selections that are small production, skillfully made and are artistic expressions. We have a number of food items available to go that support the wines such as artisan cheeses and charcuterie, tinned fish, bean to bar chocolate, fresh bread, cookies and desserts, house made condiments and other specialty foods.
